This is a keto recipe based on cloud pizza. I’ve also made cloud ravioli out of the egg white crust. Remember, if a calzone has marinara sauce in it or doesn't have ricotta cheese, it's not a calzone, it's a stuffed pizza. Feel free to make this recipe into stuffed pizza if you prefer. By my count, this calzone has about 500 calories, very low for a calzone.
Instructions
Prepare the Crust: Beat two room temperature egg whites seasoned with Italian herbs, dried garlic, salt, and black pepper to soft peaks stage. Spread on a sheet of parchment paper sprayed with oil in an oval shape, about a foot long and seven inches wide. Bake at 400 degrees for 5 minutes, or until the crust is a light brown color.
Assemble: Place the cheese and meat on half of the crust. Brush the edges of the crust with a little bit of egg yolk mixed with water. Fold the crust over the meat and cheese, and crimp it together with a fork. The less cooked bottom should be on top. Brush the top of the calzone with the egg yolk water mixture.
Cook: Bake or air-fry at 350 degrees for 15-20 minutes, making sure not to burn the crust. Serve with pizza sauce on the side for dipping.
