Similar to my keto fish sticks, this recipe ended up tasting shockingly similar to McDonald's chicken McNuggets, but they're only 5 ingredients, keto, and air-fried. I made this recipe by braising chicken breast in mushroom broth giving it a flavor similar to MSG. The recipe is mixed with ground pork rinds, making it taste like it was deep-fried in lard. But it's all-natural, I used organic ingredients, and it has 50g protein, 25g of fat, and zero carbs. So you can eat them without guilt. I made a keto barbecue sauce to dip them in, but I've never been able to make a homemade barbecue sauce as good as store bought, maybe one day. While this recipe is doable in an oven, it's designed for a pressure cooker and air fryer. You can get a mini pressure cooker on sale at Amazon for $60. The chicken mushroom broth leftover from braising the chicken tastes amazing, I highly recommend salting it and drinking it from a mug.

Keto Chicken "McNuggets"
Ingredients:
- 5.5 oz (155g) chicken breast(I used simply nature organic free-range chicken breast from Aldi)
- 1 egg(I used pasture-raised brown eggs from Sprouts)
- 1/4 cup (25g) shredded cheese, packed(I used Trader Joe's grass-fed New Zealand cheddar)
- 2 tbsp (10g) ground pork rinds(I used the brand Pork Panko)
- 1 to 2 tsp all-purpose seasoning(I used a mix of Trader Joe's Mushroom Umami Seasoning and Trader Joe's 21 Seasoning Salute)
- Mushroom broth, as needed (see below)
Mushroom Broth:
- 1/3 cup (8g) dried shiitake mushrooms
- 1.5 cups (355g) water
Instructions:
- Make mushroom broth by pressure cooking the shiitakes and water for 30 minutes. Strain and reserve.
- Place the chicken breast in a pressure cooker and mostly cover with mushroom broth. Pressure cook on high for 15 minutes.
- Remove chicken, reserve broth (drink it as an appetizer or save for another recipe), and chop the chicken into 1/4 inch chunks.
- In a bowl, mix chopped chicken with egg, shredded cheese, ground pork rinds, and seasoning until combined.
- Shape into nugget shapes—use classic McDonald’s style shapes(boot, bell, ball, and bone) if desired.
- Air fry on parchment at 400°F (200°C) for 6 minutes.
- Flip nuggets and air fry 4 more minutes.
- Remove nuggets from parchment and place directly on the air fryer basket. Air fry 10 more minutes until crisp.
- Serve with your favorite keto barbecue sauce.
