This is a recipe I did to make use of the grass-fed skirt steak I got at Aldi as well as a way of using up some leftover black rice. This is based off the Taco Bell gordita(which is not a real gordita, but oh well), but is not nearly as bad for you. I used a quick einkorn flour flatbread for the shell. Einkorn flour and black rice are much healthier substitutes for white flour and white rice. These are considered ancient grains from early in agrarian society. The less healthy modern grains are derived from them. Black rice can be bought pre-cooked, but I used some I had cooked previously in a pressure cooker. I find cooking black rice in a pressure cooker gives it a nice texture. All animal products I used in this recipe were 100% grass fed. I recommend using Santa Cruz 100% organic lime juice for this recipe, I actually prefer it to fresh squeezed lime juice and it makes some amazing margaritas. Seriously, don’t use the standard from-concentrate lemon/lime juice, they taste terrible. I did the whole recipe on a single cast iron skillet. This recipe has about 550 calories.

Steak and Cream Cheese Gordita

For steak:

Mix together skirt steak(cut into small strips), lime juice, oil, and chili powder. Saute in a pan until fully cooked.

For flatbread:

Mix einkorn flour, kefir, and baking soda. Knead into a ball for a couple of minutes, and roll out on a lightly flour surface. Fry on both sides on a cast iron skillet until lightly browned. If you’re doing the flatbread first, you can wrap it in a damp towel or paper towel and leave it in an oven on the lowest temperature to keep it warm until the rest of the recipe is finished. It might develop a slightly spongey texture if you do this, so ideally the flatbread should be done last.

Assembly:

Spread cream cheese on the flatbread, add black rice, then steak, then lettuce, then cheese, then onion, then tomato, then guacamole.
