One of my favorite things to get at Taco Bell a long time ago was Mexican pizza, so I decided to make a healthier version. While the calories are about the same, Mexican pizza at Taco Bell was fairly low in calories for fast food already. I kept the calories under 600. To keep the calories down, I rolled two tortillas very thin, but this could be a bit tricky, you could always up the flour to 45g(1.5oz) and the kefir to 30g(1oz). Kefir is like a mix of drinkable yogurt and buttermilk and is something I always have in my kitchen. It's better than milk for baking. This recipe does work with buttermilk, but the tortillas come out better when using kefir. Einkorn flour tortillas taste great, and keep the glycemic load of the dish down. I used grass-fed beef and organic Mexican shredded cheese from Aldi for this recipe.

Procedure:
Make the Tortillas: Mix the einkorn flour, kefir, and salt. Knead for a couple minutes and roll into a ball. Place on a floured surface, dust with flour, and roll out with a rolling pin to the size of standard soft taco shells. Place on a seasoned cast iron skillet on medium to medium-high heat. Cook until small brown circles appear on the bottom, then flip and let the other side brown. Cover the tortillas with a towel and keep warm.
Make the Refried Beans: Rinse 1/4 cup of dried black beans, place in a pressure cooker, submerge in water, and cook on high pressure for 50 minutes, then release the steam. Place the beans in a strainer to strain out the water. Heat oil on a skillet and brown the garlic and onions slightly. Alternatively, add garlic and onion powder to the refried beans. Cook the refried beans on the cast iron skillet and mash with a spatula. After a few minutes, place the mashed beans in a bowl, add a little water, and stir and mash with a fork. Keep the beans in a warm place for later.
Prepare the Ground Beef: Place three ounces of ground beef on a skillet, stir and break up with a spatula, then season with any chili powder or taco seasoning. When beef is fully cooked, taste and adjust the seasoning. A little water or oil can be added to make the beef more moist. Keep warm for assembly.
Assemble the Pizza: Place the ground beef between the two tortillas. Spread the refried beans on top. Top the beans with 1 ounce of shredded cheese. Place under a broiler or in an air-fryer for a couple of minutes until the cheese melts. Take out, and top with lettuce, onions, tomatoes, avocado, and salsa.
