I recently discovered hearts of palm linquini, a keto pasta that's extremely low in calories. This, combined with lower calorie organic chicken thighs from Sam's Club, allowed me to make chicken fettuccine alfredo with about 580 calories. I also like the bake mozzarella on top of pasta, so that's what I did.

Heat a stainless steel skillet on medium-high heat until water behaves like mercury when put onto the pan, this will make it non-stick without oil. Cut the chicken into cubes, place onto the pan and cover. After a few minutes the chicken should naturally unstick. Stir a few times while cooking covered until the chicken is lightly browned and fully cooked, 5-10 minutes. Add the butter, heavy cream, parmesan cheese, and hearts of palm to the skillet. Season with garlic, parsley, salt, and pepper. Taste and adjust seasoning. Place in an oven safe dish, top with the mozzarella cheese, garnish with parsley, and bake under a broiler or in air-fryer until the cheese starts to turn brown and bubble, about 3 minutes.
