Beef Taco with an Egg White-Cheese Shell(keto)
This was just an experiment to see how cheese, egg white, tomato, and onion would work as a keto soft taco shell, and it worked pretty well. The cheese, onions, and tomatoes are already in the shell so I just added lettuce and salsa on top. All in all, a pretty tasty keto meal.

Ingredients:
- 1/2 cup (56g) shredded Mexican cheese blend(I used Simply Nature Organic from Aldi)
- 1 egg white (30g)
- 1/4 cup (40g) diced tomatoes
- 1/4 cup (40g) diced onions
- 2.5 oz (71g) ground beef
- 1 tsp (2g) smoked paprika
- 1/4 tsp (0.5g) onion powder
- 1/4 tsp (0.5g) garlic powder
- 1/4 tsp (0.5g) cumin
- 1 tsp (5g) 100% lime juice(I used Santa Cruz Organic)
- Salt and pepper to taste
- Toppings: shredded lettuce, guacamole, salsa, etc.
Instructions:
- Mix cheese, egg white, tomatoes, and onions. Spread into two taco-sized rounds on parchment. Bake or air-fry for 15-20 minutes, flipping once towards the end to brown the other side.
- Brown ground beef in a skillet. Add paprika, onion powder, garlic powder, cumin, lime juice, salt, and pepper.
- Spoon beef into taco shells. Top with lettuce, guacamole, salsa, or any desired toppings.
