I found out that my saffron black rice topped with a poached egg is very similar to gyeran bap(Korean Egg Rice). This is a traditional Korean dish served with buttered rice and topped with a sunny-side-up or occasionally a poached egg. I prefer poached. This dish is usually served at breakfast. This makes a great healthy breakfast. The black rice makes it extra nutritious and lowers the impact on blood sugar. I've adjusted my recipe for black rice, upping the cook time to 40 minutes since I find this makes it less chewy. Gochujang is a korean chili paste, many big grocery stores carry it. This is traditionally eaten with a spoon and not chopsticks.
Procedure:
Place the rice, water, and salt in a pressure cooker. Cook on high pressure for 40 minutes. Allow the steam to release naturally. Stir in the grass-fed butter. Top with a sunny-side-up(or poached) egg. Top with soy sauce, sesame seeds, sesame oil, dried chives, and sliced seaweed.
