Einkorn flour is the original flour from the beginning of agrarian society. Compared to wheat flour, it's loaded in micronutrients, has a low glycemic index, and if that's not enough, it tastes better than white flour. The only catch is the price. But, compared to pre-made healthy bread it ends up being a lot cheaper. Making bread can be a tedious process, though, so I've come up with the fastest bread recipe possible that can be made in minutes. It doesn't even require yeast, although you're free to use instant rapid-rise yeast if you want. The end product will probably be better, baking soda just makes it as simple as possible. If you want the best flour tortillas you've ever eaten, just omit the baking soda. The technique for rolling out the dough with a rolling pin on a floured surface can take a little practice, but once you get it down you'll be able to knock out fresh flatbreads and tortillas almost immediately.

Mix the ingredients together, and knead for about 2 minutes, or until smooth. Roll out the dough on a lightly floured surface with a rolling pin. Heat a cast iron skillet to medium to medium high heat. Cook on both sides until it starts to brown. Serve fresh
