Air-Fried Chicken Snack Wrap with Einkorn Flour Tortillas
I took a super unhealthy McDonald's food and made it healthy. You've got complex carbs and magnesium from the einkorn flour, collagen protein from the pork rinds, and omega 9's and probiotics from the ranch. And unlike McDonald's snack wraps, it won't be limited edition. This recipe has about 500 calories, you can also add cheese if you want, but I used onions and pickles instead of cheese.

Ingredients
Chicken Tenders:
- 2 slices of chicken breast or tenderloins, 1 oz each(30g)(I use organic free-range chicken breasts from Aldi)
- 10g (1 tbsp) Jovial Foods Organic Einkorn Flour
- 15g (1 tbsp) Kalona Supernatural Grass-fed Kefir
- 10g (2 tbsp) ground pork rinds(I use the brand Pork Panko)
- All-purpose seasoning, to taste(I use Trader Joe's 21 seasoning salute)
Tortillas:
- 60g (½ cup) einkorn flour
- 40g (2 tbsp + 2 tsp) kefir
- Pinch of Himalayan pink sea salt
Ranch Dressing:
- 15g (1 tbsp) Chosen Foods avocado oil mayo
- 15g (1 tbsp) kefir
- ¼ tsp dried dill
- ¼ tsp dried chives
- ¼ tsp dried parsley
- Pinch of garlic powder
- Pinch of onion powder
- Salt and pepper to taste
Toppings:
- Shredded iceberg lettuce
- Two bread and butter pickle slices, cut in half
- Raw sweet onion slivers
Instructions
- Mix tortilla ingredients into a dough. then divide and roll into two rounds the size of a large tortilla on a lightly floured surface. Cook each side in a dry cast iron skillet until golden spots form. Wrap in a damp towel and keep in a warm place such as on top of your air-fryer, or in your oven.
- Dip the chicken in flour, dip in kefir, then coat in seasoned pork panko.
- Air-fry at 400°F for 15-23 minutes, until golden and crispy.
- Stir together all ranch ingredients in a small bowl and adjust seasoning to taste.
- Assemble each wrap with tortilla + ranch + lettuce + chicken + pickles + onion. Serve warm.
