Chia seeds are awesome, they allow you to make a high fiber low-carb dessert rich in omega 3's. These are a great plant-based source of healthy omega 3's and fats. For the cashew butter I recommend finding one without sunflower oil in it, since sunflower oil is highly processed. It's best if cashews are the only ingredient. Unlike peanuts, which are a legume similar to soy, cashews are actual tree nuts. Many people think cashews are healthier because of this. I used allulose with just a touch of honey to sweeten the recipe. The recipe should still be keto since chia seeds have low net carbs.

Procedure: In a small bowl, whisk together coconut milk, cashew butter, cocoa powder, allulose, honey, vanilla, and salt until smooth. Stir in chia seeds and mix well to distribute evenly. Cover and refrigerate for at least 2 hours (or overnight for the best texture). Stir after 15 minutes to prevent clumping. Top with roasted cashews, shaved chocolate, or a dash of cinnamon if desired.
