This is a breakfast I enjoy that uses celery root as a healthy substitute for potatoes. At about 10 net carbs, this is considered a keto breakfast. Pork Panko(ground pork rinds) gives it a little extra crunch and collagen protein. The best place to buy Pork Panko is off the Wal-mart app. I also make chicken panko with the meat, skin, and cartilage picked off a pressure cooked carcass of a chicken. Some stores also carry pre-ground pork rinds intended for breading. This recipe has about 400 calories.

Dice the celery root, ham, and onion. Heat a pan on medium to medium high heat. Spray the pan with avocado oil. Brown in the pan for a few minutes. Reduce heat to low, cover, and allow to cook for around six minutes, or until vegetables are soft. Add the pork panko, parmesan, and season. Cook for about 2 more minutes. Place on a plate and top with avocado and a poached egg.
